Our menu plan this week features Easter leftovers recipes. The meals for this week include lots of ham and eggs as ingredients, since you probably have a lot of eggs left (we hope you don’t have all hard boiled eggs!).
Several of the recipes call for Bisquick baking mix as an ingredient. If you’d like to make your own, check out our frugal recipe for how to make your own Bisquick baking mix.
Our free printable Take and Make Menu Plans contain everything you need for an entire week’s dinners and all you have to do is the shopping and cooking! Print out the menu plan each Sunday, which includes:
- A printable grocery shopping list of ingredients. Print out the list, check off what you already have on hand, then take your shopping list to the store.
- A dinner meal for each day. Click the name of the meal to print the recipe and directions. (After the week is over, add the recipes to your cookbook for future use.)

Meals with Recipes:
Monday
Dinner: Overnight Egg-Sausage Bake recipe. While recommended as an overnight breakfast bake, we like the idea of putting it on the dinner menu as well. Makes 6 servings.
Tuesday
Dinner: Quiche Lorraine recipe. Makes 6 servings.
Wednesday
Dinner: Ham and Swiss Brunch Bake recipe. This Easter leftovers recipe will help you use up both ham and eggs in these mysterious half sandwich/half casserole creations! Serves 10.
Thursday
Dinner: Ham and Cheddar Torta recipe. This delicious Easter leftovers recipe includes both ham and eggs, and includes broccoli and beans as well. Makes 6-8 servings.
Friday
Dinner: Santa Fe Egg Bake recipe. This spicy egg bake only takes 15 minutes of prep time before baking and will use up your leftover raw Easter eggs. Makes 6 servings.
Saturday
Dinner: Ham and Three-Bean Bake recipe. This recipe is a perfect way to use up leftover ham, while including healthy beans as an ingredient baked under delicious cornbread. This quick dinner recipe only takes 35 minutes to make from start to finish. Makes 8 servings.
Sunday
Dinner: Leftover Love. Spread out a buffet table of all the leftovers from the week’s meals. This means a day-off for the chef!
