I have the best family in the world – they eat what I cook and don’t complain! We’ve been on a deep grocery cutback for a few months, meaning that I use the same staples and rotate a limited number of recipes. They still weren’t complaining about the frequent use of pork roast and pork-related meals… but I was! I was so tired of eating pork, but it’s such a cheap meat and I stockpile it when it’s on sale. Dreaming of chicken, I knew it was time for a change. Luckily chicken and beef pot roast are on sale at Safeway this week. This week’s meal plan has some well-deserved variety, so enjoy!

Breakfast choices: Cold cereal

Lunches: (leftovers, brown bagged!)

Dinners:

Monday~ Nachos: Our homemade nachos are a family favorite. We use nacho chips (spectacular sale = big stock up), top with refried beans, diced tomatoes, and two kinds of cheeses (cheddar and pepper jack on sale). Add hot sauce for mom & dad! Believe it or not, we have a large stock of “fire sauce” from Taco Bell because when we do drive thru, that’s usually where we go. They put about 100 sauce packets in the bag, so I keep the extras and use them when cooking our Mexican meals!

Tuesday~ Potato soup (potatoes and bacon in a creamy milk sauce). This is adapted from my mom’s/Grammie’s recipe.

Wednesday~ Beef pot roast with potatoes and carrots and rice.

Thursday~ Crockpot beef and broccoli. This comes from a great frugal recipe I got online years ago. Fast, easy, cheap.

Friday~ **Leftover Love** (Mom’s night off from cooking!)

Saturday~ Dad’s barbeque cooking outside – hot dogs and chicken thighs and drumsticks.

Sunday~ Crockpot beef barley lentil soup. Cheap grains – I love ‘em!
