Menu Plan: Easy Dinner Recipes


Our menu plan this week features quick and easy dinner recipes that take little prep time.  You want to make the most of your summer, and we’re guessing that spending a lot of time cooking dinner wasn’t in the plan! 

Try these easy dinners for a week, and use the extra time you save to do something fun with your family outside.

Meals with Recipes:

Monday

Dinner: Nacho Salad.  Tex-Mex can be a great way to hide veggies from your little ones.  They’ll love devouring down this vegetable-filled nacho salad!

 

Tuesday

Dinner: Enchilada Casserole.

Wednesday

Dinner: Chicken Lo Mein.  This oriental favorite gets a new twist by using spaghetti in this easy dinner recipe.

Thursday

Dinner: Aloha Pork Chop Skillet.  Inexpensive pork chops make this Hawaiian summer dish an easy dinner recipe you’ll want to check out.

 

Friday

Dinner: Chicken and Spinach Risotto.  Thought you could only get risotto at a restaurant?  Think again! This fast and easy version of a dinner risotto will let you bring the restaurant dish home.

Saturday

Dinner: 5-Minute Southwest Layered Salad.  This light and easy summer salad has the protein side of dinner taken care of.

Sunday

 

Dinner: Leftover Love. Spread out a buffet table of all the leftovers from the week’s meals.  This means a day-off for the chef!

  3. I made the nacho salad last night. It was sooo easy and delish! However, I used Italian dressing instead of salsa. I know, sounds weird. My hubby and son distracted me at the grocery store last night and I completely forgot the salsa. I didn’t realize it was missing until we were already making the nacho salad. The only thing I had on hand was the italalian dressing. Thanks Danelle for the recipe and menu plan! I will definately make this again and next time I will try it with salsa!
