Shopping List
Beef roast
Lentils, Barley
Potatoes, Carrots
Bisquick (or make your own Bisquick / baking mix)
Fish fillets
BBQ sauce
Hot dogs & buns (or bread)
Chicken drumsticks, wings, and/or thighs
Watermelon (if on sale) or sale fruits
Dinners
Monday: Beef pot roast.
Tuesday: Beef stew. Use leftover beef from Monday’s roast. Add potatoes and carrots (onions and turnips if you have them) in a thick beefy sauce for a hearty stew. Using Bisquick or homemade baking mix, bake biscuits for the side. If you still have extra beef left, freeze for later.
Wednesday: ~ Leftover Love ~
Thursday: Deep fried fish
Friday: ~ Leftover Love ~
Saturday: BBQ hot dogs & chicken legs. Use your barbecue to grill up some cheap meats. (Be on the lookout for hot dog and chicken pieces sales, and stock up.) Forego the veggies tonight, and follow this meal with watermelon or a summer fruit salad.
Sunday: Breakfast for dinner. Use what you have on hand – baking mix makes great waffles and pancakes.

I love your graphics! They are so cute, your menu looks great too. I often plan meals around a roast as well. Although as my kids get bigger, the less leftovers I have to stretch!

I’ll certainly try the make-your-own bisquick. I never have room in my small apartment pantry to buy a large box and the smaller boxes are too small. Thanks for the idea. Have a great week!
