Welcome to Homemaker Barbi’s Menu Plan, The Homemaker Barbi Frugal Café. Half of our family is out of town for 2 weeks, and I’m not making meals for just myself. (The baby is set with his formula!) Although I won’t be cooking this week, I have created a frugal Menu Plan for you to use as a guide. This week’s menu is based around a beef pot roast. If you don’t have one in the freezer, substitute a pork roast. If you don’t have that either, substitute with different meals!

Shopping List
Beef roast
Lentils, Barley
Potatoes, Carrots
Bisquick (or
make your own Bisquick / baking mix)
Fish fillets
BBQ sauce
Hot dogs & buns (or bread)
Chicken drumsticks, wings, and/or thighs
Watermelon (if on sale) or sale fruits

Dinners
Monday: Beef pot roast.

Tuesday: Beef stew. Use leftover beef from Monday’s roast. Add potatoes and carrots (onions and turnips if you have them) in a thick beefy sauce for a hearty stew. Using Bisquick or homemade baking mix, bake biscuits for the side. If you still have extra beef left, freeze for later.

Wednesday: ~ Leftover Love ~

Thursday: Deep fried fish

& chips. Hopefully, someone in your family has been fishing already, meaning there is free fish in your freezer. For homemade chips, peel and slice your potatoes shoestring style. Deep fry until golden, drain, then salt.

Friday: ~ Leftover Love ~

Saturday: BBQ hot dogs & chicken legs. Use your barbecue to grill up some cheap meats. (Be on the lookout for hot dog and chicken pieces sales, and stock up.) Forego the veggies tonight, and follow this meal with watermelon or a summer fruit salad.

Sunday: Breakfast for dinner. Use what you have on hand – baking mix makes great waffles and pancakes.

  2. I love your graphics! They are so cute, your menu looks great too. I often plan meals around a roast as well. Although as my kids get bigger, the less leftovers I have to stretch!

  3. I’ll certainly try the make-your-own bisquick. I never have room in my small apartment pantry to buy a large box and the smaller boxes are too small. Thanks for the idea. Have a great week!
