Meals with Recipes:

Monday

Dinner: Cheddar Chicken and Broccoli Casserole.  This is very similar to an old favorite cheesy broccoli casserole recipe that I lost a long time ago.  This one is sure to be a favorite with your kids, even though it’s packing broccoli!

Tuesday

Dinner: Confetti Meatloaf.  Sounds tasty, doesn’t it?  This recipe got its name because it looks like confetti; the meat mixture is filled with small bits of colorful veggies that give it an unusual look.

Wednesday

Dinner: Pork Chop and Hash Brown Bake.  This recipe calls for canned onion rings. However, in the interest of frugality, I’d suggest making your own onion rings by slicing an onion, coating and frying.

Thursday

Dinner: Cheese and Vegetable Chowder. This meatless chowder can be served as a side with baked chicken breasts (which we’ve added to the shopping list for you).  Another method of adding some protein is to add your favorite variety of beans into the soup while cooking.  Serves 4.

Friday

Dinner: Festive Chicken And Rice.  This recipe comes from the 1970s.  If you have leftover canned cranberry sauce from Thanksgiving still in your pantry (yes, I do!) this recipe can help you use it up.

Saturday

Dinner: Coney Island Chili and hot dogs.  It’s been a long time since the summer barbeque season, but that doesn’t mean you can’t have a winter chili coney hot dog night with your family!

Sunday

Dinner: Leftover Love. Spread out a buffet table of all the leftovers from the week’s meals.  This means a day-off for the chef!
