I am trying this recipe tonight, minus the cooking spray. As I am using part ground beef and part stew meat, there will be plenty of oil already in the dish. I plan on using some of the meat in a enchilada casserole. Something like this, http://www.traderjoes.com/pdf/recipes/dinner-wow-enchilada-casserole.pdf, with whatever I have on hand.
